Fruit Salsa with Baked Cinnamon Chips

I posted this recipe awhile back on a very sweet friends blog. I thought I would repost it here on Mommas Like Me because many of my newest followers may not have seen it and it is just too amazingly delicious not to share again!

I'll first start by sharing a bit of really useless info about me...

I LOVE salsa.
So much so it's almost kinda ridiculous. Like let's say for instance I'm eating a taco from Jack in the Box, my sauce packet to taco ratio is like 3 to 1. Every bite must be covered in salsa. Or if we are at a mexican restaurant I am a complete salsa hog. I've even been known to eat chips and salsa for breakfast.
I like it hot, I like it spicy, I like it to make me sweat...
ok that sentence was a bit uncomfortable...eh hem, moving right along!

So when I came across this recipe I saw on Pinterest for a sweet fruity salsa, I knew it would be a match made in heaven.
I love fruit, I love salsa. Put 'em together and BAM! deliciousness!

So get ready to have your tastebuds tickled!

Here's What You'll Need:

Fruit Salsa
1 carton of strawberries, diced
1 6oz container of raspberries, cut in half
1 6oz container of blackberries, cut in half
2 apples, peeled - cored and diced
2 tablespoons white sugar {more or less to taste}
1 tablespoon brown sugar {more or less to taste}
3 tablespoons fruit preserves, any flavor {I used strawberry}

In a large bowl throughly mix all fruit with the sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator for at least 15 minutes.

**A note about the sugar: I recommend starting with a small amount of sugar then adding more if needed. I added all the sugar and it was a bit too sugary for my taste {imagine that!}. The amount of sugar really depends on the amount of fruit you use and how naturally sweet it already is.

**A note about the fruit: The fruit I used was just what I had on hand. You can use just about any fruit your little heart desires...kiwis, watermelon, mandarin oranges...anything goes!

Baked Cinnamon Chips
1 package of flour tortillas
melted butter or butter flavored cooking spray {I used butter...Paula Deen would be proud}
cinnamon sugar

Preheat oven to 350 degrees.
Coat one side of each tortilla with melted butter or spray. Sprinkle buttered tortillas with desired amount of cinnamon sugar. Using a pizza cutter, cut tortillas into wedges then arrange them on a baking sheet in a single layer. Spray again with cooking spray
{not necessary if using melted butter}.

Bake in the preheated oven for 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool completely then serve with chilled fruit salsa. Best when made and eaten the same day otherwise the fruit gives off too much juice and it gets runny.

This is so refreshing, so sweet and SO darn TASTY!
It would be perfect to serve at a baby shower, a picnic, a super fun dessert to have if you are making mexican food, great to pack in your kids lunch or a fun after school snack!
We had ours with dinner which was Turkey Burgers with Blue Cheese {check out that recipe HERE} and it was a hit!
