Hello Momma Like Me readers! I'm Michelle and I write over at The Momma Bird. I like to write about life, parenting, being a military spouse, educational tips, and of course my faith in God. I also have a fun little vlog that I started up recently to lighten the mood. I'm so excited that Lacee invited me over to her blog today. I have a family favorite recipe to share with you. I hope you like it!
Fajitas & Homemade Tortillas
Fajitas
Ingredients:
- 1 green bell pepper
- 1 red/orange/yellow bell pepper
- 1 small white onion/yellow onion
- 1 round top steak
- Salt, Pepper
- Onion Powder
- Garlic Powder
- Fajita Seasoning (i know, totally cheating, but this is the EASY way. i have made it with my own seasoning and it's still yummy just takes more effort)
Directions:
- Season steak w/salt, pepper, garlic & onion
- Brown Steak - a few minutes on each side to seal in the juices. Set on a plate & let rest.
- Saute sliced onions & peppers in pan.
- While the veggies are cooking slice up your steak. Put into pan with veggies, cook until you are happy with the done-ness of the steak & veggies.
- Add in seasoning pack & water.
- Cover and simmer.
Homemade Tortillas
{this makes 8 tortillas}
Ingredients:
- 2 Cups Bread Flour
- 1 teaspoon Baking Powder
- 1/4 Cup Vegetable shortening or lard* OR 1/4 C & 1.5 tsp. unsalted butter
- 3/4 Cup HOT (115F-130F) water
* I use the butter crisco for these. I've used butter in the past but the crisco really words the best
Directions:
- Mix by hand or on low speed until the dough comes together.
- Knead by hand or with the dough hook on low to medium speed until smooth - 4-6 minutes.
- (i do it by hand but it's a work out!)
- Divide the dough equally into 8 pieces and roll them into balls. Cover & let them rest for 20 minutes.
- (I do this before I start the fajitas so they will be ready to cook when the fajitas are about done)
- Roll out each ball of dough into a 6-8inch round circle. If the dough seems too resistant, move to a different one and return to that one later.
- Head a cast-iron (that's what i use) or nonstick skillet over medium heat.
- Slide the tortillas into a skillet one by one, cooking until brown spots appear, about 30 seconds on the 1st side and 15-20 once it's flipped.
- Put the tortillas in a foil envelope to keep them nice, toasty & soft! They won't stick together :) Don't worry.
I hope you enjoy this recipe! If you end up trying it I'd love to hear about it! Don't forget to pop over and say hello! I love meeting fellow bloggers! :)
