Cheese Tortellini Soup

I know it's the middle of summer and probably the last thing you have on your mind is a nice hot bowl of soup. But today I woke up feeling horribly sick {sad face} and when I'm not feeling well, no matter what the season, soup always makes me feel better. So, since this recipe is SO easy and literally takes like 20 min from start to finish, I turned the A/C down and made myself a pot of my sisters amazing, comforting, feel better
Cheese Tortellini Soup.


As I mentioned, this is my big sister Deena's recipe. She is a fabulous cook and she also happens to be an identical twin!

Now this is a recipe that really doesn't require exact measurements {that's the beauty of soup!} and I usually cut this recipe in half since I'm the only one in my house who'll eat soup...sad huh? So I'll tell you approx. how much I use of everything and you can feel free to change it up however your little heart desires.

Let's begin, mmmk?

Here's what you'll need:

5 or 6 large carrots, peeled and chopped
5 or 6 celery stalks, chopped
1/2 of a large yellow onion, chopped
2 cloves of garlic, minced
1/2 stick butter
8 cups chicken broth
{I've never tried it but I'm sure you could use vegetable broth if you are vegetarian}
4 cups water
1 package cheese tortellini
nutmeg, salt & pepper to taste
 freshly grated parmesan cheese

Melt butter in a large pot. Add carrots, celery, onion, garlic, salt & pepper and saute until tender.


Pour in chicken broth and water and bring to a boil. Add the tortellinis and cook as directed on the package.


Turn off heat and grate some fresh nutmeg over the soup. Serve with fresh parmesan cheese sprinkled over top.






It doesn't get much easier than that!
And it tastes absolutely exquisite!
Soup in the summer...I think so :)
